An albariño that follows the classical
winemaking process for white wines,
recovering the practices and techniques used
in Rías Baixas for hundreds of years.
Traditionally, these Albariños were made in
small, damp cellars; where, to improve
alcoholic fermentation, a small maceration of
the grapes would take place before pressing.
