This 100% Xarel·lo is crafted using a unique multi-vessel maturation process that defies convention, capturing the essence of our terroir in every drop. Classic varietal notes of fennel and chamomile are perfectly layered with sophisticated earthy, toasted, and vanilla nuances derived from its diverse maturation vessels. Unctuous and silky on the entry, yet defined by a vibrant acidity that provides perfect freshness. The mid-palate reveals the distinct personality of each container: * the minerality of the cement egg, * the creaminess of the barrel, * the raw earthiness of the amphora * the reduction of the demijohn * the freshness of the stainless stell tank. * culminating in notes of ripe apricot.
