Our Raw CK Lobster Meat features premium claw and knuckle meat sourced from exceptional quality cold-water Atlantic lobster. The product is processed using High-Pressure Processing (HPP), an advanced technique that naturally separates the raw meat from the shell.
During this process, lobsters are placed in a cold high-pressure chamber, causing the shell and meat to contract and allowing the meat to release quickly, cleanly, and completely from the shell.
Because the process uses no heat, the lobster remains completely raw while maintaining its natural freshness, flavour, and texture—making it ideal for a wide range of culinary applications and flavour infusions.
