Raw Lobster Tails (HPP) Our Raw Lobster Tails are whole tails sourced from exceptional quality cold-water Atlantic lobster. Each tail is carefully deveined, cleaned, and flash-frozen to preserve its natural flavour, texture, and freshness. These tails are processed using High-Pressure Processing (HPP), an advanced technique that naturally separates the meat from the shell without the use of heat. During this process, lobsters are placed in a cold high-pressure chamber, causing the shell and meat to contract and allowing the raw meat to release cleanly from the shell. The lobster remains completely raw, preserving its natural quality while making preparation easier and more efficient. Fresh raw tails are lightly glazed with a thin layer of ice, helping protect the product from freezer burn and extending shelf life while maintaining premium quality.
