www.honey-ai.com The first intelligent microscope to perform on-site automated honey quality analysis. Honey.AI system works with a design-owned light microscope robot that is capable to automatically scan the whole surface of the glass slide, which contains the honey sediment. The equipment is completely autonomous, and includes additional accessories to allow the visualisation of sugar crystals within the honey as well as yeasts / bacteria. Honey.AI equipment is accurate and reliable, with mechanical movement precision up to 1 micron. Honey.AI works thanks to the inclusion of image processing algorithms and different deep learning neural networks. The artificial intelligence of Honey.AI has been widely trained since 2019 with hundreds of honey samples from different geographical and botanical origins to be able to detect, classify and count the pollen grains contained in the sample. The recognition expertise of Honey.AI is improved every day with new botanical species from all over the world. Honey.AI has been designed to be able to carry out 3 different types of analysis with the same equipment: 1) Pollen analysis, 2) Crystallisation rate (% of sugar crystals), and 3) Microbiology (yeasts counting). Microbiology analysis will soon be upgraded with mold counts, spores and bacteria.

Our first business line is based on LIQUAM®, a High-Power Ultrasound reactor for the respectful treatment of honey. Generally, liquid honey is always the preferred choice for consumers. Crystallized honey is not sold in supermarkets, so retailers return it to packers who must pay the costs. To avoid refunds, packers are forced to pasteurize honey by applying temperatures of up to 80ºC for 1-2 minutes. This process delays crystallization for up to 12 months. However, the high temperatures reached drastically reduce the enzymatic activity of honey, losing part of its antiviral, antibacterial and antifungal properties. LIQUAM® presents a patented technology for the non-thermal melting process based on High-Power Ultrasound with the aim of replacing the widespread pasteurization process. The continuous contact of SonicatSystems with companies in the honey sector has helped us to understand other key needs of the sector, such as the limitations they have when analyzing the pollen content to determine the authenticity of the honey they buy in bulk. Pollen analyzes today are carried out strictly manually, in specialized external laboratories and are complex (requires a highly trained technician), time consuming (requires 1-1.5 hours per sample), poorly reproducible (results depend on technician skills and experience) and expensive. This is how our second business line arose: Honey.AI, a cloud platform based on low-cost optical microscopy and Artificial Intelligence that can analyze not only the pollen content of a honey sample but also its crystallization ratio, and yeast concentration. Honey.AI reduces analysis time, enables real-time measurement on-site, increases reproducibility of results, and greatly reduces human dependency.
