Fresh New Zealand Blackcurrants contain more than 700mg/100g of health-benefiting anthocyanins, predominantly cyanidins and delphinidins. Cyanidins give fruits and berries their red colour, and delphinidins their blue colour. The combination of these two anthocyanins in New Zealand Blackcurrants gives them their distinct dark purple colour at an intensity not seen in other commonly consumed fruits and berries.
The New Zealand Institute of Plant and Food Research has recently shown that anthocyanins such as delphinidins can act as pro-oxidants, while other anthocyanins such as cyanidins can act as antioxidants.
The anthocyanins have an impact on the balance of cellular reduction and oxidation, which is called the redox balance.
Redox balance shifting depending on cellular condition:
- high level antioxidants (ex. cyanidin) → reduction
- high level pro-oxidants (ex. delphinidin) → oxidation
A shift to oxidation, for example, promoted by the higher level of delphinidins compared to cyanidins in New Zealand Blackcurrants, activates cell signaling pathways that ADAPT cells so that they have improved anti-inflammatory, antioxidant and energy activity.
