DL-alanine has the function of suppress saltiness and tartness, enhancing relish(umami).
It has a good freshness and can promote the effects of chemical flavorings, peculiar sweetness and can improve the taste of the artificial sweeteners, improve the sourness of organic acids and the flavor of vinegar.
Compared with other Amino Acid, DL-alanine bring less discolour of browning (Maillard Reaction).
Applications including Fishing sauce, insistent noodles and its powder, meat and sea food products and soy sauce and seasoning.
