Ripe banana esters (with a hint of pear) make this new, Omega Yeast-original strain a standout for dropping more banana notes in pastry stouts, milkshake IPAs and others. Unlike the Hefeweizen strain from which it is derived, Bananza is versatile because it is non-phenolic and therefore incapable of producing clove flavors that would mask its pure banana profile (the parent strain was modified using CRISPR Cas 9 to introduce a naturally-occuring disruption in the phenolic gene that all non-phenolic brewing yeast we use today carry).
